Ready-to-eat, time/temperature control for safety food marked with a date that exceeds 7 days after opening/preparation. Observed in the walk in cooler meat lasagna with a label of 6-01-25, operator stated that the lasagna was cooked the day before. Instructed operator to properly date marked the lasagna.
Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. Observed in the reach in cooler located at cook line cooked pasta (69F - Cold Holding); cheese (58F - Cold Holding); cheese (50 F - Cold Holding), as per employees they put food in the unit less than 1 hour ago. Instructed employees to removed all the from inside of the prep unit to another cooler and to add more ice to the top to rapidly the food lower temperature. Observed on the preparation table at cook line fresh garlic in oil (80 F - Cold Holding), as per operator outside for about 30 minutes, instructed operator to move fresh garlic in oil back to the cooler or to place it in a container with ice.
