Time/temperature control for safety food, other than whole meat roast, hot held at less than 135 degrees Fahrenheit. Observed at front counter steam table mixed vegetables (129F - Hot Holding). As per operator for about 1.5 hours. Operator removed and replaced with hotter vegetables.
Handwash sink not accessible for employee use at all times. Observed hand wash sink at entrance if kitchen blocked by buckets. Operator removed.
Handwash sink used for purposes other than handwashing. Observed front counter used to stored utensils. Operator removed.

Wiping cloth solution exceeding the maximum concentration allowed stored in a location that could result in the cross contamination of food, equipment, utensils, linens, single-service, or single-use articles. Observed a spray bottle with chlorine at +200 ppm stored over raw chicken at protein room. Operator removed the spray bottle and discarded the solution.
In-use knife/knives stored in cracks between pieces of equipment. Observed six knives stored between wall and three compartments sink. Operator removed the knives, they cleaned them and stored on knives holder.
In-use wet wiping cloth/towel used under cutting board. Observed two towels under cutting board at protein room. And two towels under cutting boards at preparation area. Operator removed the towels.

Observed garlic in mayonnaise (11:25 am) (54 F - Cooling) and garlic in mayonnaise (12:33 pm) (53 F - Cooling). The product dropped 1 grade in one hour. Operator opened the container for rapid cooling.

Establishment packaging time/temperature control for safety food using a reduced oxygen method that does not control the growth of and toxin formation of C. botulinum and the growth of Listeria monocytogenes. Establishment does not have an approved variance from the Division of Hotels and Restaurants. Observed the establishment packaged cooked turkey and cooked lamb in reduced oxygen package and maintained over 48 hours. Special process guidance form was provided.
