Observed employee come into kitchen after lunch break and begin tasks without handwashing. Inspector went over process with person in charge on proper techniques.
Employee failed to wash hands before putting on gloves to initiate a task working with food. Observed employee take out trash, come back inside and put on gloves. Inspector stepped in and spoke to employee. Employee removed gloves, washed hands and put on new and clean gloves.
Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. Observed in reach in across cook line: diced tomato (54F - Cold Holding); hummus (50F - Cold Holding); grape leaves (52F - Cold Holding); hummus (50F); feta (49F - Cold Holding).
