Ready-to-eat, time/temperature control for safety food prepared onsite and held more than 24 hours not properly date marked. Multiple items like corn, shredded chicken, queso and other pans in walk-in cooler made yesterday not date marked. Operator date marked all pans.
Accumulation of black/green mold-like substance in the interior of the ice machine/bin. Interior deflector plate in right ice machine soiled.
Accumulation of lime scale on the inside of the dishmachine. Lime scale build up in dishwasher.

Wiping cloth quaternary ammonium compound sanitizing solution not at proper minimum strength. Sanitizer Bucket (Chlorine 0ppm). Manager added more bleach to bucket and rechecked at 50ppm.
A return visit. The problems from the previous inspection had been dealt with.

Cooked/heated time/temperature control for safety food not cooled from 135 degrees Fahrenheit to 70 degrees Fahrenheit within 2 hours. On prep table, mashed potatoes (79F - Cooling @ 2 hours). Owner stated he got busy cooking orders. Owner put mashed potatoes in walk-in cooler to bring temperature down.
Time/temperature control for safety food, other than whole meat roast, hot held at less than 135 degrees Fahrenheit. In stand up warmer next to walk-in cooler, green beans (130F - Hot Holding); fried chicken (129F - Hot Holding). Owner stated food has been in warmer for approximately 1 hour and returned food to stove to heat up. Rechecked green beans at 176F and fried chicken at 210F before returning food to warmer.
Food-contact surface soiled with food debris, mold-like substance or slime. On server line, nozzles to tea urns soiled with brown residue. Owner cleaned nozzles during inspection.
Handwash sink used for purposes other than handwashing. Observed ice in handwash sink in server line. Owner removed all ice from sink.
Required employee training expired for all employees. To order approved program food safety material, call DBPR contracted provider: Florida Restaurant and Lodging Association (SafeStaff) 866-372-7233. Only food handler employee employed during time of inspection training expired 2-12-2025.

Non-food grade paper/paper towel used as liner for food container and/or equipment. Cart next to fryer on cook line lined with paper towels to absorb grease from used equipment. Manager removed paper towels from cart.
Wiping cloth sanitizer solution exceeds the maximum concentration allowed. In prep area, Sanitizer Bucket (Chlorine 200+ppm). Manager remade sanitizer bucket and retested at 100ppm.

Employee coughed, sneezed, used a handkerchief or disposable tissue then engaged in food preparation, handled clean equipment or utensils, or touched unwrapped single-service items without washing hands. Employee on cook line coughed into crease of arm and immediately engaged in food preparation without washing hands. Manager coached employee on proper hand washing procedures.
Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. On salad buffet, ranch dressing 55F. Dressing placed into service approximately 30 minutes prior. Dressing moved to reach in cooler to cool.
Establishment has no written procedures for employees to follow in response to a vomiting or diarrheal event where the vomit or diarrhea is discharged onto surfaces in the establishment. No written plan available. Inspector emailed Form 5030-104 (Clean Up Instructions for Vomitting/Diarrhea).

Nonfood-contact equipment exposed to splash/spillage not constructed of materials that are corrosion resistant, non-absorbent, smooth and easily cleanable. Handle for chest freezer is cracked on cook line. Shelf and legs are rusted for prep table near rear exit.

Toilet/urinal not flushing/functioning properly. Both toilets in men's and women's bathroom would not flush, operator fixed both toilets during inspection.
