Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. Observed shrimp skewers, meatballs and chicken skewers under broiler on cooks line at 50f beginning of inspection. Operator states food was there for less than 3 hours. Operator moved food to walk in with ice bags. Temps at end of inspection were 42f.
No paper towels or mechanical hand drying device provided at handwash sink. No paper towels at hand wash sink at near triple sink. Operator replaced.

In-use knife/knives stored in cracks between pieces of equipment. Observed cook place knives between two reach in coolers. Spoke with operator and they corrected cooks action during inspection
