What the inspector wrote — 2 findings
Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. In the reach in cooler on the cook line, observed raw shrimp (48F - Cold Holding); raw chicken (47F - Cold Holding); raw salmon (49F - Cold Holding). Operator stated foods are moved to cooler during service, less than 1 hour prior to inspection. Operator began to move foods back into the walk in cooler and add ice.
