Dishmachine chlorine sanitizer not at proper minimum strength. Discontinue use of dishmachine for sanitizing and set up manual sanitization until dishmachine is repaired and sanitizing properly. Dish machine chlorine 0ppm. Manager called Ecolab arrived and repaired the machine during this inspection, then chlorine 50ppm.
Raw animal food stored over/not properly separated from ready-to-eat food. Pan containing raw pork stored on shelf above wrapped potatoes inside walk-in cooler. Manager moved the raw pork to a lower shelf during this inspection.

Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. On ice at cookline: egg wash (54F - Cold Holding). Manager stated the liquid egg wash was placed on ice approximately one hour prior and added water to the ice to aid in cooling the wash to 41F.
Vacuum breaker missing at hose bibb or on fitting/splitter added to hose bibb. Backflow prevention device missing at spigots on front and back of building.
Commercially processed ready-to-eat, time/temperature control for safety food opened and held more than 24 hours not properly date marked after opening. Open jug of milk missing date mark inside walk-in cooler. Manager stated the milk was opened on 5/1 and added the proper date mark during this inspection.
Food-contact surface soiled with food debris, mold-like substance or slime. Interior of ice machine door soiled with brown substance.
Handwash sink not accessible for employee use at all times. Handwash sink at fountain machine blocked by dump bucket and trash can. Manager unblocked the sink during this inspection.
Incorrect chemical test kit provided for measuring the concentration of the sanitizer solution used in the three-compartment sink and/or dishmachine. Manager provided quaternary test strips for chlorine dish machine.

Employee touching ready-to-eat food with their bare hands - food was not being heated as a sole ingredient to 145 degrees F or immediately added to other ingredients to be cooked/heated to the minimum required temperature to allow bare hand contact. Establishment has no approved Alternative Operating Procedure. Employee at cookline observed placing fully-cooked chicken on a plate with bare hands. Manager instructed employee to wash hands and put on gloves, then prepare a new plate.
