Time/temperature control for safety food, other than whole meat roast, hot held at less than 135 degrees Fahrenheit. In the steam table, marinara (124F - Hot Holding) operator stirred, marinara second temperature (142F - Hot Holding) operator replaced lid and will occasionally stir to reheat.

Interior of oven/microwave has accumulation of black substance/grease/food debris. Table top air fryers with grease debris build up inside the air fryer.

In-use utensil not stored on a clean portion of food preparation or cooking equipment. In use pizza paddle stored between pizza ovens on stone. Operator relocated the paddle to easily washable sheet trays on top of the pizza oven.
