Single-use gloves not changed as needed after changing tasks or when damaged or soiled. Observed employee rinse hands in three compartment sink and not change soiled gloves to change tasks. Employee wash hands coached on proper procedure.
Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. Observed in reach in cooler mussels (51F - Cold Holding), as per operator less than 4 hours. Operator placed in reach in cooler to cool. Observed in silver reach-in cooler to the right of dry storage raw chicken (51F - Cold Holding); raw swai (49F - Cold Holding); curry sauce (51F - Cold Holding). As per operator door is constantly being opened and closed during service less than 4 hours. Door was left closed.
Wiping cloth solution exceeding the maximum concentration allowed stored in a location that could result in the cross contamination of food, equipment, utensils, linens, single-service, or single-use articles. Observed at preparation table across from reach in freezer. Sanitizer Bucket (Chlorine 200ppm). Employee corrected concentration of Sanitizer Bucket (Chlorine 100ppm)
Employee washed hands in a sink other than an approved handwash sink. Observed employee rinse gloves in three compartment sink. Coached employee on proper hand washing procedures.
