At current rate of cooling product will not reach 70F within 2 hours. Operator placed product in reach in cooler.

Meatballs made in house, frozen, then removed from freezer on 3/30 no date mark. Educated operator.

Operator stated items not prepared or portioned today, being held in cooler less than 4 hours, moved to triple door stainless reach in.
Food being cooled by nonapproved method as evidenced by inadequate rate of cooling during time of inspection. At prep area speed rack; chicken wings (89°F - Cooling 3:10pm/88°F - Cooling 3:35pm). Stored at room temperature on multiple full sheet trays stacked close together. Operator stated cooling for one hour. At this rate product will not reach 70°F within 2 hours. Operator separated trays and began moving to reach in freezer/reach in coolers.
In-use utensil in non-time/temperature control for safety food not stored with handle above top of food within a closed container. At flour storage container; scoop handle laying in flour. Operator removed.
