Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. -Observed ribs cold held at 44 degrees Fahrenheit in walk-in cooler. Operator placed item in walk-in freezer for quick chill. Per operator, ribs placed in unit 3 hours prior to inspection. -Observed raw chicken cold held at 45°F and burger patties at 44°f in refrigerator drawers. Per operator, both items were placed in unit 2 hours prior to the inspection. Operator placed ice pack on items for quick chill
