Observed salmon frozen in ROP packaging dated 4/8 stored inside reach in cooler, Spoke to a Kyle concerning ROP not using 10k bags Chef can provided process waiver form. Chef Judd cut the bags open at time inspection, no stop sale need due to allow the oxygen out of the bags. Must provide HACCP plan for the special process.
Single-use gloves not changed as needed after changing tasks or when damaged or soiled. Observed employee drop items on the floor wearing gloves remove gloves and did not wash hands after, Chef had to tell employee to wash her hands. Recommend training for employees on hand washing.
Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. Checked temperature of oats 45°f, guacamole 48°f slice tomatillos 44°f stored inside reach in cooler less than 4 hours. All items in the same cooler removed place in another reach in cooler to quick chill. Pantry cooler spoke to Chef notify engineering
Ceiling tile missing. Observed missing ceiling tile above reach in cooler.
Equipment in poor repair. Observed seams of door gaskets in the reach in cooler located in server station.
