Wiping cloth sanitizer solution exceeds the maximum concentration allowed. Quaternary sanitizer bucket testing at 500+ ppm. Quaternary chemical sanitizer dispensing at the three compartment sink is testing at 500+pm. Discussed diluting the chemical with water while waiting in the chemical dispenser to be service. Quaternary sanitizer bucket was diluted with water and now testing at 400 PPM.

Must submit plans and plan review application to DBPR H and R Plan Review office located at 2601 Blair Stone Rd., Tallahassee, FL 32399-1011. Plans must be submitted AND approved within 60 days. Employee in kitchen failed to demonstrate testing the dish machine by utilizing test strips meant for vegetable cleaning solution on a chlorine dish machine.
