Commercially processed reduced oxygen packaged fish bearing a label indicating that it is to remain frozen until time of use no longer frozen and not removed from reduced oxygen package. A bag of raw tuna poke cubes thawed remained in package stored in walk-in cooler.

Large reach-in cooler by fryers at cook line - Cold Holding: ravioli 49 F, cooked chicken wing 48 F, crumbled blue cheese 50 F, diced tuna 47 F. Operator moved some food items to walk-in cooler and placed ice bags on some food items at time of inspection.
