Kitchen Dishwasher (Chlorine 0ppm); Kitchen Dishwasher (Chlorine 100ppm) Inside bar dish machine tested 0ppm. Technician arrived during the visit and repaired machine, which then tested proper ppm. Quaternary ammonium sanitizer not at proper minimum strength for manual warewashing. Do not use equipment/utensils not properly sanitized. Bar triple sink tested 0ppm. Operation stated they use two quat tablets per batch. Added two more tablets, per manufacturer instructions and solution tested properly ppm.
Raw animal food stored over/not properly separated from ready-to-eat food. Raw ground beef patties were stored directly above cooked ribs in the refrigerated drawers under the grill line. Operator moved to proper storage hierarchy
Single-use gloves not changed as needed after changing tasks or when damaged or soiled. Observed food handler use gloved hand to place raw chicken in the fryer basket and drop into the oil. He then began handling the french fry basket handle without changing gloves. Inspector stopped further cross contamination and had employee wash hands, change gloves and sanitize basket handles. Fryer baskets handles are handled by all employees in food preparation.

Handwash sink not accessible for employee use at all times. Handwashing sink between the dishmachine and the cook line was blocked by a tall trash can and a tall stock pot with soiled pans on top. Handwashing sink between washing sinks need to be kept accessible and only used for handwashing.
No currently certified food service manager on duty with four or more employees engaged in food preparation/handling. A list of accredited food manager certification examination providers can be found at http://www.myfloridalicense.com/DBPR/hotels-restaurants/food-lodging/food-manager/ 4 cooks preparing food, two bartenders serving guests were working with no Florida-approved Certified Food Protection Manager on-site. Owner arrived during the visit and had certification, but the vendor was AAA Food Handlers, which is not a Florida Approved program. No other Certified Manager was on site during the visit.

Ceiling/ceiling tiles/vents soiled with accumulated food debris, grease, dust, or mold-like substance. Ceiling in the kitchen is soiled, has a water spot by the back door and the light shields contain dead insects. Ceiling fans at the outdoor bar had dust build-up.

Educated Manager on duty that a designated place should be available for phones and drinks, below and away from food and food equipment.

Handwash sink used for purposes other than handwashing. Hand wash sink to left of walk in cooler used to thaw frozen bags of raw shrimp. Cook removed shrimp and placed in refrigerator.
Bowl or other container with no handle used to dispense food. Observed cups with no handles in rice, oregano and spice bins. Chef removed cups and discarded.

Employee handled soiled equipment or utensils and then engaged in food preparation, handled clean equipment or utensils, or touched unwrapped single-service items without washing hands. Observed dish washer touch dirty dishes then touch clean. Educated dishwasher and dishes were rewashed.
Single-use gloves not changed as needed after changing tasks or when damaged or soiled. Observed employees not change gloves before initiating a new task. Operator instructed employee on proper hand washing and glove usage.. Employee washed hands and donned new gloves.
Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. Observed sliced cheese (60F - Cold Holding); cooked beef (45F - Cold Holding) on cook line. Operator discarded cheese and placed other items on ice for quick cooling.
Toxic substance/chemical improperly stored. Observed chemical spray bottles stored facing clean equipment on storage rack at indoor bar area. Operator moved for proper storage.
Handwash sink removed from food preparation/dishwashing area. Must be reinstalled in the same location where removed. Observed hand wash sick removed in dish area. Educated operator the need for hand wash sink and instructed that they can not be removed without approval from plan review.
