Food being cooled by nonapproved method as evidenced by inadequate rate of cooling during time of inspection. In walk in cooler, Chicken Liver (51F - Heated Cooling)at 3:37 pm, since 10 :00 am, approximately 5.5 hours ago. At this rate, proper cooling will not occur. Advised manager to place food in freezer to reach 41 F and below.
Handwash sink not accessible for employee use at all times. Gallon of bleach and container of dishwasher detergent stored in handwashing sink in kitchen. Manager removed items from sink.
