Stop Sale issued due to food not being in a wholesome, sound condition. In bottom of flip top reach in cooler, two vacuum sealed packages of tuna fully thawed. See stop sale.
Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. In sushi cooler, krab (50F - Cold Holding). Operator stated he had out for few orders then put back into cooler.

Incorrect chemical test kit provided for measuring the concentration of the sanitizer solution used in the three-compartment sink and/or dishmachine. Operator uses chlorine but has quaternary test strips.
Bowl or other container with no handle used to dispense food. In bottom of flip top reach in cooler in container of yum yum sauce to go bowl used as scoop. Operator removed.
Commercially processed reduced oxygen packaged fish bearing a label indicating that it is to remain frozen until time of use no longer frozen and not removed from reduced oxygen package. In bottom of flip top reach in cooler, two vacuum sealed packages of tuna fully thawed. See stop sale.
