Observed containers of meat stored higher than chill line of cooler. Operator changed into more shallow pan and placed ice on both meats to chill. Wiping cloth sanitizer solution exceeds the maximum concentration allowed. Observed Sanitizer Bucket (Chlorine 200+ppm) on cook line. Test strip turned dark purple. Operator diluted sanitizer solution and retested at 100ppm.
