Cardboard used to line food-contact shelves. Observed cardboard lining a shelf in the reach in freezer with pork on it in the kitchen, owner took out the cardboard.
In-use utensil in non-time/temperature control for safety food not stored with handle above top of food within a closed container. Observed handle of spoon in a container of sugar in the kitchen, owner took the spoon out.
Sanitizer bucket stored with food, equipment, utensils, linens, single-service, or single-use articles. Observed chlorine bucket stored on preparation table next to open container of plantains in the kitchen, owner moved the bucket.

No written procedures available for use of time as a public health control to hold time/temperature control for safety food. Observed a container of sliced tomatoes and cut lettuce time marked without written procedures, printed a copy for the owners.

Food stored on floor. Observed two cases of water on the floor at the front counter.
