Observed high heat sanitizing dishmachine at 157F. Operator contacted service company for service and has three compartment sink set up with quaternary solution at 200ppm.

Operator stated items had been in reach-in cooler for less than 30 minutes. Operator removed items and placed in walk-in cooler for rapid cooling.
