In stand up reach in freezer across from dish area, plastic tub of raw chicken wrapped in plastic over tub of open package of raw fish. Operator had employee removed chicken to store properly. Also, in walk-in cooler raw shelled eggs stored on top of queso cheese blocks.
Ready-to-eat, time/temperature control for safety food not consumed/sold within 7 days after opening/preparation. See stop sale. In reach in cooler on cook line, container of house made salsa date marked 4/22/26. Not used within 7 days.
Time/temperature control for safety food, other than whole meat roast, hot held at less than 135 degrees Fahrenheit. In oven on cook line, rice (120F - Hot Holding). Employee stated he reheated 1 hour prior. Employee put rice on stove top. Retemped after 15 minutes at 167F.

Employee washed hands in a sink other than an approved handwash sink. Server rinsed off hands in bar triple sink. Manager coached employee on proper hand washing procedures. Employee washed hands correctly.
