Raw animal food stored over/not properly separated from ready-to-eat food. Raw beef in two door reach-in cooler across from deli case stored above ready to eat limes. Operator removed limes to properly store. Also, raw chicken stored over raw beef-not commercially packaged in reach in deep freezer next to triple sink. Operator reorganized meats to properly store.
Time/temperature control for safety food, other than whole meat roast, hot held at less than 135 degrees Fahrenheit. cooked rice (120-126F - Hot Holding) at stove area. Operator raised temp to reheat to more than 165F
