Observed cut tomato (49F - Cold Holding); house made tuna salad (50F - Cold Holding); hummus (50F - Cold Holding); hot dog (49F - Cold Holding); coleslaw (49F - Cold Holding); cut lettuce (54F - Cold Holding) in flip top reach in cooler in kitchen. Ambient thermometer reading at 48F. Per manager, all products placed in reach in cooler upon opening at 11:00. Temperatures taken at 2:45. All products moved to reach in freezer or another reach in cooler to quickly chill. Also, observed raw beef (45F - Cold Holding); raw shrimp (44F - Cold Holding); fish (47F - Cold Holding); cheese (47F - Cold Holding) in holding drawer below flat grill. Ambient digital thermometer reading at 44F. Per manager, all products placed in drawer at opening at 11:00. Temperatures taken at 2:50. Manager moved all products to another reach in cooler and added ice bags. At the end of inspection, all products between 37F-39F.
