Food being cooled by nonapproved method as evidenced by inadequate rate of cooling during time of inspection. At walk in cooler chili (68F - Ambient Cooling)@9:35, since 9:00am, 62F, @10:18am. At this rate product will not reach 41F within 4 hours. Advised operator to place product in freezer to fascilitate cooling process. Operator placed product in walk in freezer.
