Time/temperature control for safety food thawed in an improper manner. Observed the following in separate pans of standing water defrosting, deli ham, deli turkey and raw chicken. Operator removed all items from pans and and placed items in walk-in cooler.

Spoke with person in charge about the Big 6 food borne illnesses, person in charge did not have knowledge of Big 6 illnesses or signage to reference.
