Time/temperature control for safety food, other than whole meat roast, hot held at less than 135 degrees Fahrenheit. Shrimp in pan above grill at 128F. Per employee, shrimp made 15 minutes prior. Shrimp heated to 164F.

Time/temperature control for safety food, other than whole meat roast, hot held at less than 135 degrees Fahrenheit. Rice in warmer at front counter at 121F. Per employee, rice prepared at approximately 1:00. Temperature taken by inspector at 2:08. Employee heated rice to 168F.

Manager does not have any employee training proof, states all certificates have expired for all six employees; Roger, Ka, Mylene, Bui, Xiaopin and Gun.
