Cooked poultry not reaching a minimum internal temperature of 165 degrees Fahrenheit. chicken fingers (147F-157F - Cooking, retemp at 177F-197F) cooking in fryer on cook line, employee redropped chicken fingers immediately and second temperature check at 177F-197F.
Employee touched face/hair and then engaged in food preparation, handled clean equipment or utensils, or touched unwrapped single-service items without washing hands. Employee scratched face with bare hands then continued to handle clean equipment without washing hands first. Also same employee sitting on prep table in kitchen on phone at start of inspection then got up and began to handle clean utensils and equipment without washing hands first.

Toxic substance/chemical improperly stored. Spray bottles of sanitizer and detergent stored next to to go lids at front counter. Spray bottle of detergent stored on rack hanging over to go cups in drive through area. All bottles moved.
Vacuum breaker missing at hose bibb or on fitting/splitter added to hose bibb. Missing from splitter at mop sink on hose side.
Commercially processed ready-to-eat, time/temperature control for safety food opened and held more than 24 hours not properly date marked after opening. Open container of milk in reach in cooler at dessert station at front counter, per manager it was opened Saturday.
Equipment in poor repair. Lid of reach in freezer chest in prep area closest to warehouse washing area.
Food stored on floor. Bag of flour and cooking oil by fryers on cook line.
Nonfood-contact surface soiled with grease, food debris, dirt, slime or dust. Along door frames of reach in cooler across from fryers on cook line. Around gaskets of reach in freezer chests in back prep area. Inside of cabinets in middle island cabinets at front counter, counter cleaned.

Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. milk wash (47F - Cold Holding) sitting on counter on make line in very shallow ice bath, per manager milk has been sitting out for approximately 3 hours, ice added.

No proof of required state approved employee training provided for employee hired more than 60 days ago. To order approved program food safety material, call DBPR contracted provider: Florida Restaurant and Lodging Association (SafeStaff) 866-372-7233. Manager unable to find any employee training for any employees.

Warewashing sanitizing solution exceeding the maximum concentration allowed. Three compartment sink quaternary sanitizer over 500ppm at time of inspection. Color of test strip not on color concentration chart. Operator added water to solution and brought into proper range.
Equipment and utensils not properly air-dried - wet nesting. On the storage shelf opposite the three compartment sink, clean plastic containers stacked while wet.
Equipment in poor repair. Reach in chest freezer in the prep area closest to the warewashing area has a separating door gasket.
