Dishmachine chlorine sanitizer not at proper minimum strength. Discontinue use of dishmachine for sanitizing and set up manual sanitization until dishmachine is repaired and sanitizing properly. Dishmachine in the bar tested at 10ppm chlorine. Employee primed machine and retested at 50ppm chlorine.
Drain cover(s) missing. Drain cover missing at kitchen dishmachine. Employee located cover and replaced.

Beverage tubing/cold plate not separated from stored ice. In bar area at far right ice bin, tubing from soda gun hangs down into ice used for customers. Operator repositioned soda gun line to remove it from contact with the ice, no contamination observed.

Records/documents for required employee training appear to be falsified. At time of inspection some food handler training certificates listed valid for four years and written in pencil. Operator gave employee the certificates to correct.
Employee personal items stored in or above a food preparation area, food, clean equipment and utensils, or single-service items. In the downstairs cook line, employees phone on clean prep table. Employee relocated the cell phone.
Equipment and utensils not properly air-dried - wet nesting. On the storage shelf of the warewashing area, clean plastic containers stacked while wet.
