The employee doesn't know how to use the three compartment sink. Operator was instructed with the correct procedure for the three compartment sink.
Time/temperature control for safety food identified in the written procedure as a food held using time as a public health control has no time marking and the time removed from temperature control cannot be determined. Observed cachito of Jamon and cheese and croissants of ham and cheese no time marked. As per operator was putting on the display at 12:30 pm.
Time/temperature control for safety food, other than whole meat roast, hot held at less than 135 degrees Fahrenheit. Observed Tapioca pearls (81 F - Hot Holding) at steam table. As per operator was cooked three hours ago. Operator turned on the steam to reheat the product.

Observed Sanitizer Bucket (Chlorine +200 ppm) in spray bottle located next to clean containers at shelf next to reach in cooler. Operator added water to get 100 ppm.
