Accumulation of black/green mold-like substance in the interior of the ice machine/bin. Observed black discoloration above the ice dispenser shout located in the back area of the banana cabana. (Bar)

Heat strip failed to turn black to indicate the sanitization temperature of 160 degrees Fahrenheit was achieved on the dish surface and/or high temperature holding thermometer did not reach 160F. Discontinue use of dishmachine for sanitizing and set up manual sanitization until dishmachine is repaired. Checked Dishmachine four times not sanitizing properly wash temperature 162°final rinse not reaching 160°f or above recommend to use 3 compartment sink wash, rinse and sanitize until dishmachine is repaired Engineering technician is continue to work on the dishmachine at time of inspection. Spoke to Supervisor on duty call back inspection required given 7 day call back inspection.
