Observed beef empanadas (132F - Hot Holding) at hot box next to coffee machine, as per management baked for less than two hours, manager instructed staff to reheat it to 165°f and raise temperature of holding box to maintain proper hot holding temperature.

Establishment has no approved Alternative Operating Procedure. Observed employee handling yellow rice with bare hands, employee was coached to not handle food with bare hands and was coached on bare hand contact policies, rice was discarded.
Raw animal food stored over/not properly separated from ready-to-eat food. Observed raw shell eggs stored over cooked potatoes at kitchen line reach in cooler. Staff relocated the eggs to the bottom rack.
