Observed : in the back reach-in freezer, raw chicken over repacked beef. ALSO, on the cook line, the chicken was on the back row in the make table, followed by shrimp and beef. The new order was chicken-beef and then shrimp.
Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. Observed : chicken cooked earlier at 93°, sitting on the drain board. This was moved to the walk-in cooler, partially covered.
