Cooked/heated time/temperature control for safety food not cooled from 135 degrees Fahrenheit to 41 degrees Fahrenheit within 6 hours. 1st temp taken at 10am beef stock (44F - Cold Holding) per chef, stock was cooked then placed in reach in cooler around 10pm to start cooling, did not document the temperature when refrigerated. 12 hours since item was placed inside cooler to cool down.
