Employee beverage container on a food preparation table or over/next to clean equipment/utensils. An employee drink with a straw was on the prep table next to a colander of cut greens. Discussed with Operator the importance of a designated area below and away from food and food equipment.
Employee with no hair restraint while engaging in food preparation. Female employee was slicing vegetables with a mandolin slicer near the cook line with no hair restraint. Discussed with Operator.
Food stored on floor. Buckets of produce were stored directly on the floor in the walk-in cooler.
Time/temperature control for safety food thawed in an improper manner. Observed raw chicken thawing in a plastic pan of standing water. Inspector pointed out to the cook. Inspector turned on the water.

Operator is vacuum-sealing fish and chicken. HACCP plan has been submitted but has not been approved.

Handwash sink used for purposes other than handwashing. Handwash sink in the dish room was used to fill water carafes and also to dump liquid from a Cambro container.
