Dish machine reading 0ppm chlorine. Manager replaced sanitizer chemical, primed, and then reading 100ppm chlorine.
Wiping cloth sanitizer solution exceeds the maximum concentration allowed. Sanitizer bucket on cook line reading over 500ppm quaternary. Employee remade to proper 200ppm.
