Commercially processed ready-to-eat, time/temperature control for safety food opened and held more than 24 hours not properly date marked after opening. Observed 2 bags of cooked empanadas with no date marking in reach in freezer. Empanadas are cooked at restaurant and frozen on site and only transported to truck when stock is low. Establishment is closed on Mondays, so person in charge stated empanadas were cooked on Friday or Saturday.

Observed multiple commercially processed food items opened 3 days prior per person in charge with no date marking in reach in cooler closest to service window.
No chemical test kit provided when using sanitizer at three-compartment sink/warewashing machine or wiping cloths. Observed person in charge unable to provide chemical test strips for sanitizer.
Operator is not properly tracking/marking the number of days ready-to-eat, time/temperature control for safety food prepared onsite was held at refrigeration temperatures prior to freezing in order to properly date mark the food when it is thawed and held at refrigeration temperatures again. Observed multiple bags of empanadas prepared on site with no date markings in reach in freezer by truck entrance.
Cutting board has cut marks and is no longer cleanable. Observed cutting board with grooves and no longer smooth and easily cleanable stored next to three compartment sink.
A return visit. The problems from the previous inspection had been dealt with.

Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. Cheese, ham, hummus 44-45F. Person in charge states has had door open frequently. Ambient temperature of unit 41F during inspection.
Food-contact surface soiled with food debris, mold-like substance or slime. Cutting board with staining at make line.
Dead roaches on premises. Two dead roaches observed on floor of truck under sink.

Food/ice received from unapproved source/no invoice provided to verify source. See Stop Sale. Invoice for empanadas was provided from a subsidiary company of licensed facility in Orlando, not able to provide license information for said company Moreno's Kitchen LLC.

Food stored outside. Operator has 2 reach in coolers stored with TCS foods inside and only 1 has lock on unit in back of plaza with no over head protection. Operator has also deep white reach in freezer with food. Unable to get any temperatures of TCS foods that is not in freezer due to person in charge not having key. Provided technical assistance and informed operator that will need to have all foods and refrigerator stored inside food truck and nothing can be stored at home
