Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. On the cook line, raw white fish (52F - Cold Holding). Operator stated fish was removed from cold holding for about 15 minutes. Operator placed fish in reach in cooler and added an ice bag.
Handwash sink not accessible for employee use at all times. Observed hand sink on the cook line blocked by trash bin and box of food. Operator removed items away from hand sink.

The handwash sink located near the steam table is not accessible for employee use at all times. There is a large freezer and small fridge blocking the handwashing sink. The handwash sink is also being used for trays. Operator removed trays.

In the reach in cooler across from the cook line, Swiss cheese (55F - Cold Holding); sliced Gouda cheese (47F - Cold Holding); sliced pepper jack cheese (62F - Cold Holding); sliced American cheese (52F). Operator stated foods had been placed in the reach in cooler for less than an hour. Advised operator to only store food to the fill line of the containers to maintain time-temperature control for safety foods at 41F or lower.
