Ready-to-eat, time/temperature control for safety food prepared onsite and held more than 24 hours not properly date marked. Observed cooked garbanzo beans stored in reach in cooler in kitchen. As per operator, it lasts less than 2 days. Coached operator on correct procedure.

Establishment has a three compartment sink using quaternary sanitizer, advised to sanitize dishware at three compartment sink until dish machine is sanitizing properly.
