Container of medicine improperly stored. Observed a container of medicine stored in the reach in freezer with food products. Operator placed it in a container and labeled it properly.
Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. Observed on the buffet line: Salsa (60F - Cold Holding); Shredded cheese (60F - Cold Holding); Hard boiled eggs (55F - Cold Holding); Cream cheese (55F - Cold Holding). Operator stated it had been out for approximately 3hrs and does not use TPHC since they switched managers. Operator placed the items in the reach in coolers.
Food stored on floor. Observed a case of waffle mix stored on the floor of the kitchen. Operator moved it.
Open dumpster lid. Observed their dumpster lid open.
Single-service articles not stored inverted or protected from contamination. Observed there coffee filters not stored properly between uses.

Operator stated the food had been out for approximately 3hrs. Operator stated they routinely dispose of their food at the end of their 3 and a half hour breakfast.
Certified Food Manager or person in charge lacks knowledge of foodborne illnesses and symptoms of illness that would prevent an employee from working with food, clean equipment and utensils, and single-service items. Observed no knowledge of the big 6. Emailed the operator a copy.
