Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. Noodles in reach-in cooler at 47f for 3 hours. Upon questioning, Noodles arrive partially frozen from transport and are held out of temperature control to thaw in ambient air.

Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. Noodles at 49f in reach in cooler with ambient temperature of 50f for 2 hours. Operator moved noodles to reach in freezer to quickly cool noodles. Noodles at 36f after 30 minutes.
Required employee training expired for all employees. To order approved program food safety material, call DBPR contracted provider: Florida Restaurant and Lodging Association (SafeStaff) 866-372-7233. Owner ordered new books during inspection.
