At current rate of cooling sauce will not reach 70 within the required two hour window. Operator stirred sauce and added ice to increase cooling rate. cooked red peppers (68F - Cooling for 2 hours 3:35, 67F at 4:00) in deep covered container in walk in cooler. Operator removed covering to increase rate of cooling.
Soiled dry wiping cloth in use. Soiled dry wiping cloth stored on pizza prep line cutting board. Operator removed.
