Observed on cook line prep table Jack cheese (52F-56F - Cold Holding); Cheddar mix cheese (52F-56F - Cold Holding). Manager removed and placed smaller amount in ice bath. Inspector spoke to manager regarding Time As A Public Health Control for cheese held near grill.

Observed employee on cook line touch face with gloved hands and proceeded to engage in food preparation. Inspector was able to intervene and talked to employee regarding hand washing. Employee removed gloves and washed hands properly.

Manager stated multiple deliveries, one during inspection, also cooler was in defrost mode.
