Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. roasted peppers (56F - Cold Holding at 11:34am, retemp 42F at 11:50am); milk (50F - Cold Holding at 11:34am, retemp 47F at 11:50am); butter stick (52F - Cold Holding at 11:34am, retemp 43F at 11:50am). Operator stated temperatures were checked at 10am and were at 39F. Moved items to freezer and raised refrigerator temperature down.
Mobile food dispensing vehicle license number not permanently affixed on the side of the unit in figures at least 2 inches high and in contrasting colors from the background of the vehicle. Discussed with operator why the license number needed to be in 2 inch letters and where they could go on the truck.
Mobile food dispensing vehicle not connected to utilities on a temporary basis. Observed trucks waste water drain placed into retention ditch behind truck. Discussed with truck operators and commissary operators what needed to be done to fix. Commissary operators will be placing a sink in that a longer hose can reach to drain waste water.
