At make line hot holding unit: fried chicken (122F - Hot Holding), cooked plaintain (95F - Hot Holding) as per operator food out of temperature for 1 hour, operator placed on stove to reheat to 165F. At steam unit #2Cooked cabbage (115F - Hot Holding); Ackee salt fish (95F - Hot Holding) - as per operator food out of temperature for 1 hour, operator placed on stove to reheat to 165F. At front counter hot holding unit: Jamaican beef patty (122F - Hot Holding) as per operator food out of temperature for 1 hour, operator placed on stove to reheat to 165F. In oven #1 jerk chicken 120F- hot holding; rice &peas 120F- hot holding- as per operator food out of temperature for 1 hour, operator turned on oven to reheat to 165F. )
