Silverware/utensils stored upright with the food-contact surface up. Flatware in caddies for final dishwasher pass were stored with food-contact end up. Explained to Kitchen Manager the importance of storing in a manner that prevents hand contact with the food-contact end. He explained this to the dishwasher.
