Rodent activity present as evidenced by rodent droppings found. Observed approximately 40 rodent droppings in back corner of back food preparation area next to exit door. Observed approximately 15 rodent droppings along walls in back food preparation room along walls under equipment. Observed 2 rodent droppings on bottom shelf of food preparation table next to canned cheese sauce. Observed approximately 50 rodent droppings in back corner under water heater next to Co2 tanks. Observed approximately 5 rodent droppings under three compartment sink in main kitchen. Observed approximately 5 rodent droppings under 3 compartment sink in kitchen. Observed approximately 5 rodent droppings along wall behind reach-in chest freezer in main kitchen. Observed approximately 3 rodent dropping underneath bar along wall beneath equipment. Operator is in the processes of removing droppings and cleaning and sanitizing areas.

Operator stated they had been out for approximately 30 minutes. Operator placed ice on items and lowered the temperature. Observed in the kitchen reach in cooler: Chicken (46F - Cold Holding). Operator stated it had been there for approximately 1hr. Operator placed bags of ice on it.
Time/temperature control for safety food, other than whole meat roast, hot held at less than 135 degrees Fahrenheit. Observed in a hot holding container in the kitchen: Chili (110F - Hot Holding). Operator stated it had been out for approximately 1hr. Operator turned up the heat.

Operator placed items on shelves. As a repeat violation the importance of following proper protocol with this violation was reinforced with the employee.
