Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. Observed cheese in reach-in cooler make top table at 52F. Employee started she removed cheese from lower part of reach-in cooler 1 hour prior. Cheese was in two plastic container inside each other. Employee removed cheese from extra container it was stored in and move it to colder section of reach-in cooler.
Time/temperature control for safety food, other than whole meat roast, hot held at less than 135 degrees Fahrenheit. Observed cheese cooked hamburgers being hot held at 129F. Employee remove move burgers to hotter section of flat top grill.
No proof provided that food employees are informed of their responsibility to report to the person in charge information about their health and activities related to foodborne illnesses. Issued copy of Employee health agreement to operator, current staff completed Employee health agreement.
Commercially processed reduced oxygen packaged tuna fish bearing a label indicating that it is to remain frozen until time of use no longer frozen and not removed from reduced oxygen package. Employee removed fish from packaging.
