Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. Observed fresh garlic and oil mixture (72F - Cold Holding)-57F 30 minutes later; chicken (44F - Cold Holding)-43F 20 minutes later; hot dog (46F - Cold Holding)-44F 20 minutes later; corned beef (46F - Cold Holding)-45F 20 minutes later. Fresh garlic and oil mixture on shelf in front of grill, all other products in cold holding drawer below grill. Per employee, all products removed from walk in cooler approximately two hours prior. All products moved to walk in cooler to quickly cool.

Operator is not properly tracking/marking the number of days ready-to-eat, time/temperature control for safety food prepared onsite was held at refrigeration temperatures prior to freezing in order to properly date mark the food when it is thawed and held at refrigeration temperatures again. In the walk in cooler, chicken wings, brisket and pork all labeled with original date for when product was cooked then stored in freezer and pulled out two days later with no labeling for the date placed back into refrigeration.
Ceiling/ceiling tiles/vents soiled with accumulated food debris, grease, dust, or mold-like substance. Ceiling air vents closest to the dish area have accumulation of dust on vent and surround tiles.
