Observed Housemade Tomato Sauce with Spices (47F - Cold Holding); Sausage (46F - Cold Holding); Cut Lettuce (55F - Cold Holding) in walk-in cooler with an ambient air temperature of 45F. Operator stated the cooler was below 41F this morning and that he has been in and out of the cooler this morning prepping dough.
Toxic substance/chemical improperly stored. Observed spray stainless steel cleaner stored next to clean equipment to the right of steam tables holding soups. Employee moved.
Food-contact surface soiled with food debris, mold-like substance or slime. Observed can opener blade soiled with accumulation of food debris and mixer head soiled with an accumulation of food debris.
