In the front counter reach in cooler, Swiss cheese (51F); provolone cheese (53F - Cold Holding); white cheddar (50F - Cold Holding); pepper jack cheese (49F - Cold Holding). Operator stated foods are kept out for more efficient service. Foods have been out of temperature for less than an hour. Discussed and provided time as a public health control form, operator began filling out form.
